Project Overview

This project will provide training to Montana poultry producers in understanding the liabilities associated with processing poultry in a Mobile Processing Unit (MPU). Specifically, food safety liability and personal and business liability will be addressed through a series of five hands-on workshops. The producers will:
1) Increase knowledge on state and federal regulations regarding on-farm meat processing
2) Increase knowledge on correct processing procedures of poultry to meet HACCP plan requirements of the MPU
3) Increase knowledge on the licensing process for the re-sale of their processed poultry products
4) Increase knowledge of waste handling procedures

Approximately 50 producers will gain an understanding on how to process poultry, meet state and federal regulations, and how to legally access markets in Montana. Ten producers’ will further mitigate their risk through the completion of an on-farm processing plan that addresses the regulatory requirements and public food safety needs in the production and processing of poultry.
