Project Overview

This project assisted small scale fruit and vegetable producers with developing and marketing of value added products on a year round basis through restaurants and retail outlets. Workshops were conducted to introduce prospective farmers to the process of creating and marketing a value added product. From these workshops, 21 participants applied to be accepted into the Second Level Value Added Workshop which was a two-day session workshop that covered product liability, labeling, marketing, and development of a business plan. Restaurant owners and a value added co-packer were involved with the workshops in helping participants develop products that would work in their operation. Participants were required to submit a business plan for their product one month after the workshop. 11 participants ultimately worked with the consultant on developing specifics actually producing a value added product including recipe, labeling, and marketing.
