Project Overview
This project provides risk management skills to small and medium dairy producers in Washington State by providing information on starting a cheese processing business. Participants will learn effective risk management tools for business planning, safe food handling and processing, bio-security and food security, food recall preparedness, negotiating techniques and marketing strategies for specialty cheese products.
Participants are 50 small-medium dairy producers in Washington State and 10 individuals interested in or currently processing cheese in Washington State. Participants will attend a 6-hour educational workshop offered in both Western and Eastern Washington State.
Upon completion of the workshop, 40 participants will understand risk management tools and commit to use these skills in business planning, dairy production, food processing, negotiating or marketing. Within 6 months of the workshop, 20 participants will develop a business plan, alter production procedures, diversify production, or change marketing strategies to mitigate their risk and remain economically viable.
